Where is the best place in the U.S. to live "outside game"?
I want to find a place from 5 to 10 acres so you can have a milk cow and chickens, a vegetable garden, fruit and vegetables. I do not need more amenities. I just want to live simply. I need a handy place, (the price cheap land). Please specific semi, such as the state and county or similar.
Wyoming comes to mind. UP Michigan has too short a season growth, and brutal winters. Also listed in Montana. I live in North Carolina and west central (just north of Charlotte) has a lot of good soil and temperate climate. Also, here many of the counties allow pets (Bladen County next to mine does, and is near Fayetteville Supply)

I believe that you are going to find, as you progress in your career as a gardener, that what is "easy" for one person is not for another. You will discover your own specialties, all by yourself.
For example, I am never so amused as when I contemplate my own past as a gardener, when I discovered that I could not convince a zucchini to grow, yet could proudly display a carpet of Gentiana Verna so covered in bloom that the foliage beneath was hidden.
I urge you to experiment with plants that take your breath away….and never waste your time trying to be "safe" with the "easy" stuff.

Although most people would obviously not be comfortable with the outfit, most dancers wear costumes that are just as, if not more, revealing. Part of the reason for this is because they need to be able to move without constriction. Anyway, this outfit is definitely better than a bikini or something you see in a lady gaga video. i like the addition of cheese, especially pushing the local part. As a country boy who grew up with a couple of cows, milking is essential to their health. And getting local milk is kind of like getting local honey. you can taste the terroir is the best way i can put it.
I ate lunch at a Boston public school and lived. Yesterday, at immense personal risk, I went to the gleaming cafeteria at Orchard Gardens K-8 School in Roxbury, where lunch ladies spooned spaghetti bolognese and salad onto trays.

You need to consider the travel footprint of visitors and staff.
But otherwise you need to operate like anyother business, put together a proper business case an talk it through with bank managers. Some banks will be more suportive of environmentally friendly approaches & allow for longer pay-back periods.
Slightly concerned at the fact that it is to be "defendable & secure" – not very sustainable environmentally or socially friendly, nor cost-effective.
What are you "defending" against in the wilds of New Zealand that is worth the expense?
Advertise it as a Bed & Breakfast, they are still popular. Also contact groups like the Sierra Club, and other environmentally focused organizations in your area.
Work out a business plan for at least 4-5 years and go for a business loan. Try researching for a list of grant programs set up for helping out new businesses.
Focus your remaining funds on getting a few of the spaces ready and use funds from hiring them to finance the others.
Contact schools in the area that have agricultural courses. See if you can use students for labor as they intern for class credit. Also marketing resources from your fields in specialty shops on consignment could produce some funding, but your profits would be higher if you set up shop on your own grounds. Mailorder is another option.
